Super Moist Paleo Banana Bread

Serves: 1 Loaf
  • 2 cups almond flour
  • 1 tsp baking soda
  • ½ tbsp cinnamon
  • 2 eggs
  • ¼ cup agave syrup
  • ½ cup water
  • 1 tsp almond extract
  • 1 tsp pure vanilla
  • 3 ripe bananas, mashed
  1. Preheat oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
  2. Mix together the almond flour, baking soda, and cinnamon.
  3. In a separate bowl, beat two eggs well. Mix in the water, agave syrup, almond extract, and pure vanilla.
  4. Mash the bananas with a fork or mixer. Stir the mashed bananas into the egg mixture.
  5. Add dry ingredients to wet ingredients and mix well.
  6. Pour into loaf pan.
  7. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in pan for 5 minutes, then remove to cooling rack to cool completely.
