Paleo Chocolate Chunk Cookies

  • 1½ cup Cashew Meal
  • ¼ cup Arrowroot Powder
  • Pinch of Salt
  • 1 tsp Baking Powder
  • 1 cup Enjoy Life Chocolate Chunks
  • ¼ cup Extra Virgin Coconut Oil
  • 3 tbsp Pure Maple Syrup
  • 2 tsp Pure Vanilla Extract
  • 1 Egg
  1. Preheat oven to 350 F and line a cookie sheet with parchment paper.
  2. Mix together the cashew meal, arrowroot powder, salt, and baking powder, then add the chocolate chunks.
  3. In a separate bowl, beat the egg well with a fork or whisk.
  4. Mix the coconut oil, maple syrup, and vanilla extract into the egg.
  5. Stir the dry ingredients into the wet ingredients.
  6. Drop by rounded spoonful onto parchment-lined cookie sheet.
  7. Bake at 350 F for 16-18 minutes.
  8. Let cool on pan for 5 minutes before removing to a cooling rack to cool completely.
